London chef puts a twist on Mexican classics

Chef Santiago Lastra is known for the way he blends Mexican cooking and techniques with British ingredients: His Michelin-starred restaurant Kol, which creates Mexican food without traditional ingredients, opened in London in 2020. Now, he’s following it up with Fonda, which brings a classic Mexican meal to London. Dana Jacobson has more.
